VINIFICATION

Manual selection of grapes, harvest time: October. Fermentation and maceration for approximately 35 days, pumping over and délestage, with the cap submerged for the last 15 days.

REFINEMENT

Aged in 25, 35, 40, or 50-hectoliter Austrian oak barrels for 18 to 30 months. Further bottle aging before release.
