Grapes from estate-owned vineyards in Castelnuovo Calcea in the Nizza denomination area
VINIFICATION
Manual selection of grapes, harvest time: September. Fermentation and maceration at low temperature in contact with the skins for approximately 14 days, daily pumping over and délestage.
REFINEMENT
Aged in 50-hectoliter Austrian oak barrels for approximately three months. Further refinement in bottle before release.
